Whiskey is double distilled from a 100% barley mash then solera aged in used bourbon barrels sourced from Few Spirits Distillery. We bottle between 72 and 120 bottles per month as we build up our aging stock. Similar to Scotch, our single malt has a distinct flavor with notes of malt and an exceptionally smooth finish. Clark & Chesterfield™ Bourbon Whiskey is distilled from 51% Raw Yellow corn, over 30% Rye, and the remainder is Malted Barley. This high Rye Mash is aged in full size New American Oak barrels. Ashuelot Gin™ is a unique American style Gin. Not a London Dry Gin, but a New England rainy day gin. It’s light bright profile is created using Sweetwater’s Ashuelot Vodka distilled from locally grown apples and potatoes and distilling it again and vapor infusing it with 8 botanicals. Using New England grown Juniper berries mellows out the pine flavors so that the underlying botanicals like coriander, citrus and medicinals shine through. A modern Gin, perfect in a craft cocktail or enjoyed over ice.
